My guess is he (or she) would be like Grandpa on the Munsters and gum his victims to death. It would be a very slow, tedious process. The victims would probably long to get it over with, so they'd slash their necks and make it easier for the poor thing... But that's probably not the answer you're looking for.
I think they would lose their identity. It would be like losing part of what makes them, well, them. They would go mad with hunger and slowly fade away.
Okay, Alyson, minus the Grandpa Munster image, I could really see that working. Prolonged torture, intense hunger and a victim begging for death. Not bad. Just means I'll have to become a horror writer! Fun!
